Sounds like the way I did mine except I shoved a can of beer in it and put it on the barbecue. Everything was cooked on the grill. Except the salad of course,
My chicken has been bathing in a brine of brown sugar, sea salt, fresh oregano, rosemary, Thyme, mint, lemon peal and black pepper all day. Took it out gave it a massage with the same herbs and some extra extra virgin olive oil, now it's in the oven at 350 for about and hour.
Will be served with garlic and shallot smashed potatoes, blanched Asparagus and a green salad.
